Amarone is the King of Valpolicella wines. Made from the local varieties of Corvina (60%), Corvinone (20%), Rondinella (10%) and with a touch of Croatina and Oseleta sprinkled in. After picking the grapes for Amarone are placed in a drying room. They are dried for 60 days losing 30-40% of their moisture thus concentrating flavours. The skins are not pressed, just free run juice is used. Aged in barriques and large barrels for 30 months and then in bottle for a further 12 months. Such a spoilt wine requires a decadent name - "il Lussurioso" - The Lustful!
"Deep, dark, brooding ruby and garnet colours. Intense aromas of ripe red fruits, raisins and spices with hints of vanilla, tobacco, cocoa and liquorice. Very long palate, wonderfully poised and balanced. Will cellar for 20 years but don't let that stop you drinking now. Great with game, char grilled meats, braises and aged cheese"
